Delicious homemade Hibachi restaurant soup

This easy-to-prepare Hibachi style soup is full of flavor. It is also a healthy meal because it contains a lot of vegetables. Enjoy as a hearty lunch or appetizer to your homemade hibachi menu.

Ingredients

  • 2 tablespoons vegetable oil
  • ½ cup diced onion
  • ½ cup diced celery
  • ½ cup diced carrots
  • ½ cup button mushrooms
  • 4 cups chicken broth
  • ½ teaspoon garlic powder
  • ½ teaspoon ground ginger
  • ¼ teaspoon black pepper
  • ¼ teaspoon salt
  • 2 tablespoons soy sauce
  • 2 tablespoons sake
  • ½ cup diced chicken (optional)
  • ½ cup shrimp (optional)
  • ½ cup diced beef (optional)

Instructions

  • Heat a little oil in a large pot over medium heat, just enough to cover the surface of the pot.
  • Add the onion, celery, and carrots and sear them for 5 minutes, stirring occasionally.
  • Add the chicken broth, garlic powder, ginger, pepper, salt, soy sauce, and sake. Bring to a boil.
  • Reduce the heat to low and simmer for 30 minutes.
  • Remove the vegetables from the soup before serving. (You can pick the mushrooms and add them again if you are using shiitake mushrooms for extra flavoring.)
  • Add the chicken, shrimp, beef, and cook for 5 minutes (optional)
  • Serve hot. Enjoy!
