How to dissolve miso paste

Miso paste is a great way to add a deep rich flavor, but you need to dissolve it first before you can use it.

  • 1 cup hot water (or dashi for a more authentic taste)
  • 3-4 tbsp. shiro miso white miso paste

  • The first stage in making a soup with miso is cooking the hard things like carrots and potatoes in dashi or just hot water.

How do you dissolve miso paste?

  • While the broth is simmering, place the miso into a small bowl. Add a little hot water or dashi and whisk until smooth. Set aside. Different types of miso can have different salinity degrees allowing you to taste the soup as you dissolve it to make sure there’s not just too much.
  • Remove the soup from the heat, add the shiro miso mixture to it and stir to combine. You don't want to boil the miso with the soup.
  • Taste and add more miso or a pinch of sea salt if desired. Serve warm.

How do you mix miso paste with sauce?

  • To mix miso paste with sauce, you should put on the sauce in a saucepan like you would in a recipe without miso and let it heat up.
  • At the same time, dissolve a spoonful of miso in some hot water in about 3 minutes, use a whish to dissolve all of the lumps.
  • Remove the saucepan from the heat source once you've got a nice thick sauce, and add the miso paste mixture to it at the very end so it doesn't boil together with the sauce when making a reduction.

How do you melt miso for cold dressings?

  • You can mix miso in with cold dressings and you should be able to dissolve it, especially if the sauce is somewhat acidic. For the best results though, you should melt miso in a bit of warm water and whisk it until all of the lumps are gone. Then let it cool and add it to your salad dressing or cold sauce.
