Japanese Fluffy Pancakes from scratch

  • 2 cups flour
  • 2 tbsp sugar
  • 4 tsp baking powder
  • 1/2 tsp baking soda
  • 2 eggs
  • 2 tbsp butter melted
  • 1 3/4 cup milk
  • 1 pinch salt


  • Whisk the egg whites until they form stiff peaks.
  • Mix the egg yolks, milk, and butter together.
  • Add in the egg white mixture. Makes sure the foam is stiff and fold in slowly.
  • Mix all dry ingredients in a bowl.
  • Create a hole in the middle of the dry ingredients and pour your liquid ingredients. Mix slowly . The batter should be lumpy.
  • Preheat your pan to 350 degrees F.
  • Pour 1/4 of a cup of batter and cook for 2 minutes. Once bubbles form, flip the pancake and cook for another minute or two.
