1lbground pork
1largecarrotpeeled and diced (about 1 cup)
1largepotatopeeled and diced (about 1 cup)
1mediumred bell pepperseeded and diced (about 1 cup)
1mediumgreen bell pepperseeded and diced (about 1 cup)
1cupwater
1smallonionchopped
1clovegarlicminced
2tbspsoy sauce
½cuptomato sauce
¼cupraisins
2tbspvegetable oil
¼tspsalt
⅛tspground black pepper
Instructions
Soak cubed potatoes and carrots in 1 cup of water and set aside.
Heat oil in a skillet over medium high heat and saute onions and garlic till fragrant.
Throw in ground pork and saute till no longer pink.
Add soaked potatoes and carrots, discarding water.
Add bell peppers.
Add raisins, tomato sauce, soy sauce, salt and pepper, then mix.
Cover skillet and simmer on medium heat for about 10 minutes, stirring twice till potatoes and carrots are tender, and most of the liquid has evaporated.
