Ingredients

  • 1 kg chicken legs and thighs
  • 1 medium green papaya sliced
  • 2 cups coconut milk
  • 1 cup coconut cream
  • 1 cup chicken stock
  • 1 packet bok choy
  • 4 cloves garlic minced
  • 1 large onion sliced
  • 1 thumb-sized ginger julienned
  • 2 pcs green finger chilies
  • freshly ground black pepper
  • fish sauce or sea salt
  • oil

Instructions

  • In a pot add oil then sauté garlic, onion, and ginger.
  • Add the chicken and brown on all sides.
  • Add the chicken stock and 1 cup of coconut milk then bring it to a boil. Simmer in low heat for 25 minutes.
  • Add the remaining cup of coconut milk, long green chili and green papaya then simmer for 10 more minutes.
  • Add the bok choy and coconut cream then simmer for 5 more minutes.
  • Season with fish sauce and freshly ground black pepper then serve.

Notes

If you want to make Spicy Ginataang Manok, You can add some spicy red chili depending on your taste. Siling Labuyo is good and also add some spicy green pepper.
