When buying mung beans, make sure to check the package first and see if it’s still fresh.

The ideal mung beans are mature seeds and have an intense hue, are smooth and oval in shape, are free of cracks and soft patches, and are not discolored.

These beans should be uniform in size and shape, dry throughout, and are typically offered dried.

Mung beans can be sold in their pods and are slightly larger and softer when they are sold fresh. The pods should be dry, brown, and papery.

Mung beans can be sprouted, cooked into noodles, or boiled whole for eating.
